🛒 Ingredients:

For the Pasta:

  • 1.5 cups pasta (penne, fusilli, or your choice)

  • Water (to boil)

  • Salt – ½ tsp

  • Oil – 1 tsp

For the White Sauce:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour (maida)

  • 2 cups milk (warm)

  • ½ tsp black pepper powder

  • ½ tsp chilli flakes (optional)

  • Salt to taste

  • ½ tsp oregano or mixed herbs

  • ½ cup grated processed cheese (mozzarella or cheddar)

Add-ons (optional):

  • Boiled sweet corn, mushrooms, bell peppers, broccoli – sautéed

  • Chilli flakes, mixed herbs for garnish


🔥 Instructions:

1. Boil the Pasta:

  • In a large pan, boil water with a pinch of salt and oil.

  • Add pasta and cook until al dente (80–90% cooked).

  • Drain and keep aside. Rinse with cold water to avoid overcooking.

2. Prepare White Sauce:

  • In a pan, melt butter on low heat.

  • Add flour (maida) and sauté for 1-2 minutes until the raw smell goes away (don't brown it).

  • Slowly add warm milk while whisking continuously to avoid lumps.

  • Stir until the sauce thickens.

3. Add Seasoning and Cheese:

  • Add salt, black pepper, chilli flakes, oregano, and mix.

  • Add grated cheese and stir until fully melted into the sauce.

4. Combine:

  • Add boiled pasta to the sauce.

  • Mix well to coat pasta evenly with the cheesy sauce.

  • Add sautéed veggies (if using) and mix again.

5. Serve:

  • Garnish with extra cheese, chilli flakes, or herbs.

  • Serve hot with garlic bread or on its own. 😍
