Tandoori Mayo Paneer Sandwich

A Tandoori Mayo Paneer Sandwich combines the rich flavors of tandoori-spiced paneer with creamy mayonnaise, resulting in a delectable fusion that's both satisfying and easy to prepare. Here's a step-by-step guide to crafting this delicious sandwich:​





Ingredients:

For the Paneer Filling:

  • 100 grams paneer (cottage cheese), cut into small cubes

  • 1 tablespoon tandoori masala

  • 1 tablespoon thick yogurt

  • 1 teaspoon ginger-garlic paste

  • 1 teaspoon lemon juice

  • 1 small onion, finely chopped

  • 1 small capsicum, finely chopped

  • Salt, to taste

  • 1 tablespoon oil

For the Sandwich Assembly:

  • 4 slices of bread (whole grain or your preference)

  • 2 tablespoons tandoori mayonnaise

  • Butter, for grilling

Instructions:

  1. Marinate the Paneer:

    • In a bowl, combine tandoori masala, yogurt, ginger-garlic paste, lemon juice, and salt. 

    • Add paneer cubes, ensuring they're evenly coated. Let it marinate for about 15 minutes.

  2. Prepare the Filling:

    • Heat oil in a pan over medium heat.

    • Sauté chopped onions and capsicum until softened.

    • Add the marinated paneer and cook for 5-7 minutes until the paneer is cooked and the spices are well incorporated.

  3. Assemble the Sandwich:

    • Spread tandoori mayonnaise on one side of each bread slice.

    • Place the paneer filling on two slices, then cover with the remaining slices, mayonnaise side down.

  4. Grill the Sandwich:

    • Butter the outer sides of the sandwiches.

    • Heat a pan or griddle over medium heat. Grill each sandwich until golden brown and crispy on both sides.

  5. Serve:

    • Cut the sandwiches diagonally and serve hot, accompanied by chutney or ketchup.
